Craft beer here! Hop Knot opens in Southington

SOUTHINGTON - Hop Knot celebrated its grand opening Friday, inviting lovers of craft beers to come and discover flavors of local microbreweries along with a variety of specialty pretzels.

Hop Knot, located at 1169 Meriden Waterbury Turnpike, is owned by John Schauster, Michael Boney and Anthonly Calmusa and managed by Joel Porter. They decided to open this larger location after their classic blend of pretzels and beers found success in Middletown. 

“This location is great,” said Schauster on Friday as he prepared for the grand opening. “It is very different from downtown Middletown. Southington has a lot of food and a lot of stuff going on and we decided we were up for the challenge to see how we’d do in another environment. This is a nice, busy strip and we’ve heard from a lot of local people who were excited to see us open.”

Schauster said Hop Knot features a rotating tap of 24 beers, all of which are craft beers from local microbreweries. Visitors will currently find signature drinks from Backeast Brewing Company, City Steam and much more. 

“For pretzels, we do traditional, salted, non-stuffed pretzels as well as stuffed pretzels and dessert pretzels,” said Schauster. “We also have sandwiches on pretzel bread. Everything is made fresh to order.”

Schauster said some of Hop Knot’s more popular pretzels include Italian stuffed pepperoni and mozzarella and Asiago Parmesan. 

The bar itself was renovated to be “hip-casual,” as well as “rustic and comfortable,” said Schauster. There also is a collection of board games for patrons to play. 

“We began renovations in late may,” said Schauster. “The town officials were easy to work with and our landlord has been awesome.”

As for the future of the location, Schauster said he would consider carrying the brews of Southington’s local breweries - Witchdoctor and Kinsmen - and would soon begin offering specials.

“This is a bigger location so it allows us to expand and do things here that we can’t do in Middletown,” he said. “There are a lot of possibilities.”
